Let us all take a minute to admire artichokes. This low-calorie veggie with nearly no fat offers nutritional excellence including protein, dietary fiber, potassium, calcium, iron, magnesium, vitamins C, B-6, K, and other vitamins and minerals. With antioxidants and nutrients, artichokes may support your digestive health, boost cardiovascular health, and help in the prevention of cancer.

The artichoke is a thistle in the Asteraceae family, which also includes daisies, sunflowers, and other flowering plants with sharp prickles to keep the herbivores away. Humans, however, have perfected how to peel, cut, and prepare artichokes for delightful baked dishes, pan-friend entrees, delicately steamed sides, salad toppers, soup add-ins, and (of course) creamy artichoke dips.

Native to Mediterranean areas, variants of the artichoke (such as the cardoon) date back centuries to ancient Greece and Roman times. Today, artichokes remain a healthy addition to any diet.
