Luck of the Leafy Greens
As you celebrate the luck of the Irish this month, why not bring good luck to your health by eating leafy greens. Stewed, raw, or sautéed – greens can be a great addition to your diet. There are many types of greens packing disease-fighting chemicals, antioxidants, fiber, vitamins, and minerals. Southern-style collard greens, crisp romaine lettuce, and sautéed spinach have been some of the most popular greens enjoyed in American diets for decades, but kale became a hot trend in recent years due to its highly nutritious “Superfood” status.
Wonderfully frilly, kale provides numerous vitamins plus calcium, folate, and potassium. Similarly, Swiss chard has gained popularity for its high-nutrient content including vitamins A and C, but chard offers a softer texture and a beet-like taste. And if it’s flavor you’re looking for in your leafy greens, we suggest giving mustard greens a try. Crispy mustard greens offer similar nourishment as other greens, but they uniquely have a strong, peppery, biting taste. We enjoy sautéing any mixture of greens in olive oil with minced garlic and onion. Any way you serve them — leafy greens can add a colorful flair to your dinner plates this month in celebration of
St. Patrick’s Day. Snap a photo of your festive greens and share it with us on Twitter or Facebook. We’d also love to see or hear about your adventures in Ireland. Together we celebrate eating well, living long, and traveling far!
