
All Hail the Avocado
In recognition of Cinco de Mayo, the day of the Mexican Army’s victory over France in 1862, we are celebrating one of Mexico’s most nutritionally triumphant foods – the avocado. Touted as a “superfood” today, researchers believe avocados have been a staple food in diets throughout Mexico, Central America, and South America for thousands of years. Luscious, creamy, and delicious – avocados are virtually sodium-free and cholesterol-free. The tree fruit is most famous for its high amounts of oleic acid or monounsaturated fats (those are the good kind). Healthy fats coupled with folate, potassium, magnesium, fiber, and an array of vitamins make avocados a heart-healthy choice.
Simply cut long-ways in half, pop out its single seed, and use a spoon to scoop out the green goodness. Avocados go perfectly as a sidekick to any Mexican dish, and we all love them mashed in guacamole with tomatoes, onions, and spices. Avocados are also delightfully filling in salads and decadent sandwiches. But did you know that many people are also using avocados as a substitute for butter and oil in an array of baked goods and as a substitute for dairy in creamy desserts like chocolate pudding? This adds to the long list of reasons we simply adore avocados.
