
Herb Crusted Tilapia with Spinach and Black Beans
3 oz tilapia
1 Tbsp bread crumbs
1 tsp dried parsley
1 tsp Italian seasoning
1/2 cup black beans
1/2 cup spinach
1 Lemon Wedge
Preheat the oven to 425˚F. Place tilapia on a baking sheet covered with aluminum foil. Season fish with sea salt and black pepper. To make the herb crust, in a small bowl mix together 1 Tablespoon bread crumbs, . teaspoon dried parsley, . teaspoon Italian seasoning, and zest of 1 lemon. Spread a thin layer of the herb crust over fish. Bake tilapia for 10 to 15 minutes until the fish is opaque all the way through or registers 145˚F on a thermometer. While the fish is baking, cook the spinach and beans. Heat a medium-size nonstick skillet over medium heat. Add spinach and beans to the hot skillet, season with sea salt and black pepper. Cook until the spinach wilts and the beans are heated through. Serve fish over spinach and beans with a squeeze of fresh lemon juice.
