Grilled Vegetable Kabobs with Lentils

1/2 cup lentils

1/2 cup bell peppers

1/2  cup zucchini

1/2  cup onions

Mint vinaigrette with 2 teaspoons olive oil

5-ounce glass of wine

Cook lentils according to package directions. While lentils are cooking, preheat an outdoor grill or an indoor grill pan to medium-high heat. Cut peppers, zucchini, and onion into 1” pieces. Alternate skewering peppers, zucchini, and onions. Add salt and pepper to taste.  Grill kabobs for 10 to 15 minutes, turning kabobs every few minutes. To make the dressing, in a small bowl whisk together 1 tablespoon lemon juice, 1 teaspoon Dijon mustard, 2 teaspoons chopped mint and 2 teaspoon olive oil. Drizzle vinaigrette over lentils and vegetables. Enjoy with a 5- ounce glass of red wine– go ahead, you earned it!
