
Grilled Halibut with Berry, Citrus Quinoa Salad
Ingredients:
3-ounce filet of halibut
¼ cup orange segments
2 teaspoons fresh orange juice
¼ cup strawberries
½ cup quinoa salad
Few sprigs of fresh mint
1 teaspoon olive oil
Instructions:
Cook quinoa according to package directions. While the quinoa is cooking, preheat an outdoor grill or an indoor grill pan to medium-high heat. Lightly brush both sides of the fish with olive oil and season with sea salt and black pepper. Grill fish for 5 to 6 minutes per side or until the fish is opaque all the way through and registers 145˚ F on a thermometer.
To make the salad and dressing:
Mix together the quinoa, sliced strawberries, diced orange segments. Combine 2 teaspoons fresh orange juice with the olive oil and chopped mint according to taste. Season salad with sea salt and black pepper, as desired. Serve grilled halibut over quinoa salad. Enjoy!
