Thai Chicken Lettuce Wraps

Ingredients:

  • 4 pieces Bibb lettuce
  • 1 cup skinless, 100% white meat ground chicken breast
  • ½ cup diced carrots and green onions
  • 1 tablespoon chopped peanuts
  • 1 teaspoon peanut oil
  • Fresh lime juice and soy sauce

Directions:

Heat a large nonstick skillet over medium-high heat. Add ground chicken to the skillet and cook for 5 to 6 minutes, stirring frequently.

Add diced carrots to the skillet and cook for 2 to 3 more minutes. Then add the diced green onions, peanuts, peanut oil, and 2 Tablespoon soy sauce.

Stir all ingredients together and cook for 1 to 2 more minutes or until the chicken is cooked through. Spoon the chicken mixture into the lettuce leaves and squeeze fresh lime juice over the chicken.
