Light Sweet Potato Casserole

Here is a great recipe just in time for Thanksgiving.

Ingredients:

  • 3 pounds sweet potatoes peeled and cut into chunks
  • 1/4 cup egg substitute
  • 1/3 cup fat-free milk
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon

Directions: 

Place sweet potatoes in a large saucepan and cover with water. Bring to a boil, then reduce heat, cover and cook for 25-30  minutes until tender. Drain water off.

In  a large mixing bowl, beat sweet potatoes, milk, egg substitute, brown sugar, salt and vanilla until smooth. Transfer to a 1-1/2 quart baking dish coated with nonstick cooking spray. Sprinkle with cinnamon and bake uncovered at 350 degrees F for 25-30 minutes.  Serve and enjoy!
